Bourbon Chili

1 pound ground sirloin

1 onion, chopped

1 1/2 bell peppers chopped

1/2 pint mushrooms, chopped

1 sweet potato chopped

1 cup frozen corn

2 garlic cloves minced

1 1/2 Tablespoon chili powder

1 1/2 Tablespoon ancho chili powder

1 Tablespoon cumin
-
1/2 Tablespoon coriander

1 Tablespoon chipotle chilies chopped

2 teaspoon salt
-
2 teaspoon pepper

1 can fire roasted tomatoes
-
1 can petite diced tomatoes
-
1 can black beans
-
1/4 cup bourbon
-
1 1/2cup veggie stock
-
1 cup apple cider
Brown your ground sirloin in a dutch oven. Add the onion, bell peppers, mushrooms, sweet potato and corn. Cook for 1 to 2 minutes or until the onions become soft. Add the garlic, chili powder, ancho powder, cumin, coriander chipotle, salt and pepper. Cook for 1 to 2 minutes. Add tomatoes, black beans and Bourbon. Cook for an additional 1 to 2 minutes, then add the stock and apple cider. Bring to a boil, Then Cover and simmer for 30 minutes.
