Chicken Shawarma Meatball Bowl

​Ingredients

  • 2 lbsGround chicken

  • 1 cupPlain bread crumbs

  • 1/4 cupMilk optional

  • 2 Eggs

  • 4Garlic cloves, minced

  • 1/2 onion Grated, juices squeezed out with kitchen towel

  • 2 tsp Cumin

  • 1 tsp Tumeric

  • 1 tsp Cinnamon

  • 2 tsp Salt

  • 1 tsp Paprika

  • 1 tsp Garlic powder

  • 1 tsp Onion powder

  • 1Red onion, cut into 1/2" pieces

  • 3 tbsp Olive oil

  • 1 head Cauliflower chopped

  • 1 can Chickpeas rinsed

  • Greek Yogurt

  • 1/2 lime

  • 1 tsp Cumin

  • Tabbloueh MIx

  • 1 pint cherry tomatoes quartered

  • 1 granny smith apple

Directions

  1. Preheat oven to 400°F.

  2. In a large bowl combine ground chicken, eggs, bread crumbs, milk garlic, grated onions, salt, turmeric, cinnamon, cumin, paprika, garlic, and onion powder until fully mixed.

  3. Using your hands form meatballs the size of golf balls, about 2 tablespoons each, and arrange on an oiled rimmed baking sheet pan.

  4. Arrange the onion and bell peppers on the sheet pan in between the meatballs and brush the meatballs and veggies with olive oil.

  5. Another Sheet pan put Cauliflower and Chickpeas- Sprinkle 1 tsp turmeric, Cumin, paprika, garlic and salt and pepper

  6. Bake for 20 minutes. 

  7. Prepare the Tabblouh mix according to package.  When done add tomatoes and apple.

  8. Mix Greek yogurt, lime and cumin.
