Fall Pasta Salad
Ingredients

1/2 butternut squash cubed

1 bag brussels sprouts, halved

1 pint of mushrooms chopped

1 bunch asparagus, cut in thirds

1/2 bag chopped kale
-
1 cup orzo
-
1/4 cup dried cranberries

1/4 cup Italian dressing
Directions
Preheat oven to 400 degrees. Place brussels sprouts, butternut squash, mushrooms and asparagus on a parchment lined baking sheet. Sprinkle with salt and pepper and spray with olive oil. Bake for 20-25 minutes.
Cook Orzo in boiling water.
Place Kale in large bowl. Add cooked orzo to the kale. Add the Italian dressing and mix. Add the remaining ingredients.
Serve with your favorite protein
