Jicama Apple Slaw

  • 1 Granny Smith Apple, cut into strips

  • 1 small Jicama  peeled and cut into strips

  • 1/4 cup Daikon radish cut into strips

  • 1/2 English cucumber cut into strips

  • 2 carrots cut into strips

  • 1 bag of coleslaw

  • 2 tablespoon Rice wine vinegar

  • 2 Tablespoon apple cider vinegar

  • 1/4 cup olive oil

  • 1 tablespoon honey

  • 1 tablespoon Greek yogurt

In a mason jar mix together the vinegars, oil, yogurt, honey and salt and pepper.  Shake well.

In a large bowl add all the other ingredients.  Add the dressing and serve.
