Roasted Whole Chicken

Ingredients

  • 1 4-5lb whole Chicken

  • Salt and Pepper

  • 3 Tablespoon Butter, softened

  • 1/2 Tablespoon Garlic, chopped

  • 1 Tablespoon of Fresh Herbs, chopped * see Notes

  • 1 onion, large chopped

  • 2 celery stalks, large chopped  

  • 6 baby carrots

Directions:​

Take the Chicken out of the bag, remove the neck and stuff inside.  Rinse well and pat dry.

Put the onion, celery and carrots in a pan. and place the Chicken on top.

Mix the garlic, butter, herbs and salt and pepper together.  Place some of the mixture in between the skin and the breast and spread the rest all over the chicken.

Place in 400 degree oven and cook for an hour or until the chicken reaches 165.
