Sweet Potato Nachos
Ingredients

2 Sweet Potatoes cut into 1/2 moon shapes

1 tsp cumin

1 tsp chili powder
-
1 tsp smoked paprika

1/2 tsp chipotle powder

salt and pepper
-
olive oil spray
-
1/2 bag frozen corn
-
1 can black beans
-
1 poblano chili diced
-
1 onion diced
-
1 garlic clove minced
-
1 jalapeno or a can of green chilis, diced

Queso Fresco
Directions
Preheat your oven to 400 degrees. Place your sweet potatoes in an even layer on a parchment lined baking sheet and spray with olive oil.
In a small bowl mix together the cumin, chili powder, smoked paprika, chipotle powder, salt and pepper. Sprinkle 1/2 on the sweet potato and Bake for 20*-25 minutes.
In a pan over medium heat add a little oil and sauté onions and garlic. Add the frozen corn, poblano pepper, black beans, and jalapeno or green chiles. Cook until warm through,
On a plate add the sweet potatoes, black bean mixture and protein of your choice. Sprinkle on Queso Fresco.
